Guillermo Pernot's inspired Nuevo Latino cuisine is served in a magical neo-tropical setting that seems to make winter disappear altogether. On the windows are louvers lit from behind to duplicate eternal sunlight, which washes over the brightly patterned fabrics, stripes and prints that cover the banquettes and chairs. We fancy Pernot's imaginative ceviches of fish, razor clam or even snails. We're also fans of his grilled skirt steak with chimichurri sauce. A table might want to share the parrillada Argentina, a spectacular assortment of meats, grilled tableside, followed by a warm buñuelo (similar to a doughnut with a liquid center), or a silken flan. Perhaps there should be more South American wines on the list, but, with salsa playing in the background, you may prefer a rum or sugar-cane-based cocktail to make you really feel South of the Border.
