German Chef Rainer Becker’s Zuma is currently the epitome of contemporary cosmopolitan dining. The stylish maple, granite and stone interior with its huge open robata grill and fabulous cocktail bar retains its wow-factor allure with an atmosphere that’s buzzy & trendy without being too cool to care. The basic elemental interior, the brainchild of Tokyo design guru Noriyoshi Muramatsu, perfectly mirrors the restaurant’s ethos of offering ‘an Izakaya style of relaxed eating and drinking that respects the traditions of the past.’ Rainer’s spells in Sydney and Tokyo have given him a versatile appreciation of Japanese cuisine that he combines with his classic European training with great aplomb. Zuma stalwarts like Ise Ebi (Lobster Tempura with spicy Ponzu) and Wagyu no Sumibayaki (Wagyu Beef with soy and wasabi) guarantee an authentic thoroughly Japanese experience with an original twist. That’s not to say that Zuma shies away from classic fayre though, sushi and sashimi here is amongst the freshest in London and the fabulous taster menu boasts an array of classics like Hamachi rolls, Miso soup and Black cod amongst it’s numerous forays into more exotic realms. Service is exceptional with requests universally carried out courteously and unobtrusively by the staff, who are always on hand to discuss difficult dishes and how to tackle them. If Zuma’s new sister outpost “Roka” on Charlotte St is anything to go by Becker show’s no sign of slowing down and means to stick around in London for the foreseeable future…
Which can only be good news for Zuma’s growing fan base.
