On the ground floor of the hotel Okura in the heart of Amsterdam’s city centre is what most people declare to be the finest Japanese cuisine in all the Netherlands. The venue is Yamazato and the praise comes fast and plentiful…like the food it serves. Akira Oshima has maintained the restaurants Michelin star (making it the only traditional Japanese restaurant in Europe to attain one) through careful attention to detail in his menus. In breaking from the current trend of most Japanese restaurants to offer ultra-modern food Oshima offers traditional Kaiseki cuisine. ‘Kaiseki Ryori’, Japan’s refined cuisine, is centuries old and based on minimalist Zen aesthetics as well as the elegance of courtly culture. Dishes are all based around natural ingredients like beef, seafood or chicken and are served with vegetables noodles and rice. That Oshima can take such basic ingredients and create dishes that sit in the memory is a testament to his unquestionable, and frighteningly natural skill. The style of food is ideally suited to the Sukiya-style restaurant interior, inspired by the Zen Buddhist ceremonial houses from the 15th and 16th centuries. And to complete the transformation there’s even a Japanese garden right next to the Yamazato Restaurant so you feel like you’re in provincial Kyoto during the days of the Shogunate rather than 21st century Amsterdam.
