Executive Head Chef, Daniel Galmiche, believes passionately in sourcing only the finest ingredients through the best local, national and international suppliers, to ensure the food prepared in the kitchens of Cliveden is of the highest quality and consistency. Yet considering this is set in one of England’s grandest country house hotels, Waldo’s is surprisingly intimate. Elegant table settings, polished service & a jacket-&-tie dress code, not to mention a newly acquired Michelin star, certainly create a sense of occasion, but the overall feel of the restaurant is comfortable, cosy & charmingly lived in. Chef Galmiche’s cooking similarly comforts rather than confounds with dishes based on classic techniques & familiar flavour combinations. His menu states that ‘cooking is first of all about the quality of ingredients’ & his food follows that to the letter, every mouthful resounding with top-quality produce. His signature langoustine starter, for instance, has beautifully plump shellfish tails perched between thin seaweed crackers, enhanced rather than overpowered by the accompanying celeriac purée. Comfortable fine dining in an elegant setting.
