Chef Abraham García is a film historian, so it will come as as no-surprise to hear that the name of his restaurant comes from a 1961 Luis Bunuel film classic. Highly regarded as one of the most imaginative chefs in Madrid the self taught Garcia uses wit and imagination to create new innovative dishes using traditional Spanish recipes. Examples of the individualistic cooking include a salad of exotic lettuces served with smoked salmon, a chicken pastilla laced with cinnamon, baby squid with curry served on a bed of lentils, roasted lamb served in puff pastry with fresh basil, and the choicest langostinos from Cádiz. The food is sublime, and the inviting ambience makes you relax as you sit back to enjoy dishes that dazzle the eye, notably venison and rabbit arranged on a plate with fresh greens to evoke an autumnal scene in a forest. The menu changes regularly, based on seasonal ingredients so why not visit more than once and try several dishes! You won’t regret it for if there’s one thing that DOES remain constant its Garcia’s tendancy to get flavours and consistency just right!
