Hotel Byblos Spoon Byblos is much in the same vein as Ducasse’s other Spoon ventures in Paris and Hong Kong. While remaining loyal to the original concept: a spoonful of freedom and a multi-ethnic cuisine, Spoon Byblos’ fare combines the different cultures and produce of the Mediterranean, with influences from the Riviera, Italy, Catalonia, Andalusia, Tunisia and Morocco, combined with a selection of 300 wines from all over the world.Everything takes place in the transparency of a display window showcasing the produce and a glass fronted wine cellar where all the bottles on the wine list seem to float. And always, music and cuisine meet at Spoon; the sound designers Jean-Yves Leloup and Eric Pajot, have created a special musical environment which ranges from slow tempo, Hip Hop to seventies music. The style and intensity of the sound system blend into the rhythm of the evening.
