Alain Ducasse’s innovative and artistic approach to fusion cuisine has never been more apparent than in his Spoon restaurants. Like it’s sibling establishments in Mauritius, London, Tunisia, St Tropez, Paris and Switzerland ‘SPOON HK’ reflects a “total concept” developed by Mr, Ducasse which gives guests the freedom to mix and match food and cooking styles. It is an exciting combination of cuisine, décor, and service which creates a modern and innovative experience for diners. Designer Tony Chi has reinvented the stunning harbour view space which was formerly Plume restaurant, creating an exciting modern design which reflects the innovation of the SPOON concept while showcasing the breathtaking panoramic views of the Harbour and Hong Kong Island. To say the cuisine is adventurous is an understatement, black pepper Duck froi gras with mango passion glaze? Or maybe with an avocado and crispy rice condiment if you prefer? Want the belly of pork with the beef teriyaki sauce? You got it. Anything goes on Chef Tjaco van Eijken’s no holds barred menu. The SPOON wine cellar is plush with options too. Dramatically showcased within the restaurant it includes approximately 4,800 bottles with 450 different vintages featuring both Old World and New World selections. The service is chivalrous and genuine, if a tad reserved at times, but still this is because you’re the one who’s made the choices, so how could they help talk you through courses or offer wine pairings? Once you pick up the menu in SPOON you’re on your own. It’s a real irony for Ducasse, the most decorated of celebrity chefs, to give the diner the choice of menu rather than forcing choices upon them. SPOON is fun, original and leaves the diner with the firm knowledge that, as they’ve ordered it piece by piece, they’ve truly gotten what they wanted…and most come back for more.
