Entirely Self-taught Santi Santamaria’s Can Fabes entered gastronomic folk-lore when it opened in 1981. Now after earning it’s first Michelin Star his second venture Santceloni, is well on its way to commanding the same sort of respect. Santamaria and Head Chef Oscar Velasco serve up a thoroughly traditional interpretation of the best of Spanish cuisine. Ingredients arrive daily guaranteeing locked in freshness is not lost in the cooking process. The restaurant is located in a cellar, lit by two huge skylights that provide a warm and welcoming ambience of the intimate 50 seater dining space. David Robeldo is a young sommelier with an appreciation of wine and spirits far beyond his years, offering diners a splendid array of classic vintages and varietals to accompany Velasco’s cuisine. As a chairman of the Relais Gourmand association it comes as no shock that Santamaria’s newest addition is spectacular, here is a man whom truly knows what he is doing. Relax, you’re in good hands.
