Coasting into HK with as much assurances as if he was opening a bistro in the Monmartre, Pierre Gagnaire is undeniably a man in form. Not only does he have the most highly praised restaurant in Paris, but he is also responsible for the menu at “People’s Choice” award winner for restaurant magazine at ‘Sketch’ in London. Pierre II is his first foray into Asian Gastronomy, a marriage that’s piled much hype onto the shoulders’ of the Michelin starred culineer. Hype that has forced Gagnaire to roll up his sleeves and raise the bar yet again. The dizzying heights of the 25th floor at the Mandarin Oriental is the perfect setting for a truly gastro-nomical experience. Roasted free range guinea fowl in two services is particularly mouth-watering, as are roasted turbot in “Une Belle Sauce Ivore” and sliced pear coated with hazelnuts. It is clear that like his peers and fellow countrymen Ducasse and Savoy, Gagnaire is in possession of an almost inherent appreciation of texture and flavour. Chef Patron Phillipe Orico sources the best local produce as if as if he had grown up over the harbour in Mong Kok itself, forging a menu that balances all manner of cuisine in perfect equilibrium. Perhaps this is thanks to careful scrutiny of his staff, who likewise seem to have developed a keen appreciation of their chefs’ art, such is their ability to verbally dissect courses and recommend wine pairings from the established list.
