This is one of the finest and most prestigious restaurants in and around Geneva -- a city that's known for fine dining. Solid, respectable, and conservative, with a reputation for wining and dining some of the most visible politicians in Europe and the Middle East, it's housed in what was originally built as a depedence (annex) of a château that was destroyed when the rancor of the French revolution spilled across the border into the canton of Geneva. Expect elegant table settings, impeccable service, a view that overlooks rolling hills and orderly rows of vineyards, and a cuisine conceived by culinary star Philippe Chevrier. During clement weather, tables spill out onto two separate terraces, each accented with candles and flowerpots. Menu items are upscale and endlessly fussed over. You dine in grand style on top-quality ingredients. Nothing is ordinary here. Take pumpkin soup, studded with toasted pumpkin seeds and sautéed bits of veal sweetbreads. The exquisitely tasty wild gray partridge is served on a bed of buttery cabbage and bacon bits, with a sauce like liquid foie gras. The grilled Breton lobster is so tender it provokes admiration, and the line-caught sea bass is superbly prepared.
