LA celebrity chef Joachim Splichal moved his celebrated Patina restaurant into the new Walt Disney Concert Hall downtown, making the Frank Gehry-designed landmark, home to the Los Angeles Philharmonic, a culinary—as well as a design—destination. Splichal’s signature French-by-way-of-California cooking, interpreted here by executive chef Theo Schoenegger, celebrates local and regionally sourced foodstuffs in dishes such as foie gras with Ranier cherry jam, Wild River salmon with heirloom tomatoes, and olive-oil poached squab with truffles from Umbria. The polished dining room, with walnut wood-paneled walls and curvy ceilings, echoes the hall itself, prepping concertgoers for events ahead. To make a night of it at the restaurant solely, gather the gang and reserve the kitchen table to indulge in a six-course market-tasting menu while spying behind the scenes. The bar serves nibbles and drinks after the show, and a lunch menu caters to tourists visiting the Hall as well as downtown business folk.
