LA celebrity chef Joachim Splichal moved his celebrated Patina restaurant into the new Walt Disney Concert Hall downtown, making the Frank Gehry-designed landmark, home to the Los Angeles Philharmonic, a culinary—as well as a design—destination. Splichal’s signature French-by-way-of-California cooking, interpreted here by executive chef Theo Schoenegger, celebrates local and regionally sourced foodstuffs in dishes such as foie gras with Ranier cherry jam, Wild River salmon with heirloom tomatoes, and olive-oil poached squab with truffles from Umbria.
