Nobu Las Vegas is a hip, stylish sushi bar that perfectly suits the aesthetic of Peter Morton's homage to rock and roll, the Hard Rock hotel. Resident Nobu Architect David Rockwell manages to create an interior that is at once intimate and glamorous with smooth black river rocks framing the jade-tiled sushi bar; a wall of bamboo that lends an organic touch; and a birch "tree" sculpture that props up sheets of translucent rice paper to mute the lighting. True to form matsuhisa doesn’t dissapojt when it comes to the menu. Tempura, chicken teriyaki, tekka maki and all the usual suspects show up on the menu. True adventurers may wish to turn instead to the pages that describe the Nobu special hot dishes. The menu is well balanced, so one can pick and choose from asparagus tempura, iwashi or live octopus sushi and an eel and cucumber handroll all in one sitting. "Omakase," or chef's choice dinner, is for high rollers, starting at $70 per person and offering a journey through Matsuhisan cuisine that more often than not includes signatures like yellowfin with jalapeno, Rock Shrimp tempura and the world reknowned Black Cod in sweet miso sauce.
