This classy establishment is perfectly stationed on the river cam in the Cambridge countryside. Daniel Clifford’s winning and bold interpretation of classic French cooking has Earned the restaurant not one but two Michelin stars. Like his peer just down the road, Heston Blumenthal, Clifford has a keen eye for quality ingredients and a penchant for the ‘science’ of cooking. Much is made of unexpected contrasts, foams and jellies, evident in the signature langoustine starter that arrives speared on a plastic pipette of seafood sauce – the idea being to pop the langoustine in the mouth and immediately squeeze the sauce behind it. Mains, such as a pot-roast guinea fowl, creamed leeks and truffle crisps with foie gras Wellington, are impeccably executed, brazen and ambitious. With wonderfully indulgent desserts - witness a superb pistachio soufflé - and spot on service, it's no wonder readers consider this to be ‘just about perfect’.
