Much is made of unexpected contrasts, foams and jellies, evident in the signature langoustine starter that arrives speared on a plastic pipette of seafood sauce – the idea being to pop the langoustine in the mouth and immediately squeeze the sauce behind it. Mains, such as a pot-roast guinea fowl, creamed leeks and truffle crisps with foie gras Wellington, are impeccably executed, brazen and ambitious.
