One of Scotland's leading chefs, he takes his accolades in stride and strives to improve the quality of his high-price establishment in this now fashionable part of the Leith docklands. The decor is minimalist, featuring modern art. The menu, which changes frequently, is kept short and sweet, taking advantage of the best of the season; think John Dory with leeks, salsify, and mussel and almond gratin.
