Since 1976 Walter Ulz has been dominating top ten lists across Africa with his legendary, globe-spanning cuisine. There are a number of solid French classics like the rich foie gras terrine with artichoke and green peppercorn, but if you want to globe-trot, some good options are the fresh oysters served with seafood ceviche (lime-and-lemon-marinated) on rocket, quail stuffed with mushroom risotto, seared tuna with Asian vegetables, and ostrich fillet with roast vegetables and an Amarula (a sweet creamy liqueur) sauce. Set in the spacious grounds of a grand home in Wierda Valley, near Sandown Linger Longer’s dining room has an air of gracious elegance featuring mixed colourings that range from deep green to salmon pink.
