At one of Geneva's finest restaurants, the decor is intimate, intensely floral, and graced with an enormous fresco displaying an inside view of Neptune's kingdom. Although the kitchen closes on the weekend, during the week it entertains some of the most discerning palates in Geneva. The menu changes based on market conditions, but you're likely to be offered such dishes as herbed vichyssoise with hazelnut oil and a dollop of foie gras, crawfish salad with a barnacle-flavored vinaigrette, cassoulet of oysters seasoned with algae-flavored butter sauce, Atlantic sea bass roasted in a salt crust with thyme, filets of John Dory with a sauce made from whipped butter, and sea-urchin roe served with seafood-flavored pasta. If you're not in the mood for fish, you may enjoy such dishes as rack of Scottish lamb in puff pastry with spices and gray partridge roasted "en casserole" with autumn herbs.
