Since its inception in 2000 La Broche has soared into the heights of hipness. Chef Sergi Arola, A protégé of El Bulli’s Ferran Adriŕ, has garnered a penchant for an almos alchemical fascination with transforming textures and extracting essences in his dishes. Some of his work almost defies description: sea and land snails roasted in lard, combined in a kind of crazy salade tičde with miniature violet potatoes (the latest fashion from Peru), capers, tiny marinaded onions and chanterelle mushrooms, all arranged on a square of fine filo pastry, is a surrealist creation worthy of that other Catalan master, Salvador Dalí. On the other hand, the menu at La Broche also pays tribute to the traditional food of Arola's childhood in such dishes as the deconstructed escudella of beans with meatballs and foie gras. Lovers of minority meats will want to try the confit of cockscombs, perhaps followed by (shock!) loin of horse with tomato bonbons. From the four different olive oils recited by the waiter at the start of the meal, to the stunning desserts courtesy of Txema Puente (the ravioli of liquorice with a gin foam and black-beer ice cream is a sensational combination of wild and earthy flavours), this is certainly a brave new world. Not least the setting, a minimalist coolbox in which colour has been banished from everything except what's on the plate. La Broche is as radical a restaurant as you will find anywhere in Spain.
