French restaurants typically find it rather hard to leave their mark of the Big Apple. Ducasse’s Essex house closed down, there’s no Guy Savoy or Pierre Gagnaire and even the U.K’s finest of export of French Cuisine, Mr Gordon Ramsay, has been met with luke warm response. But there’s one big name in French gastronomy who seems to thrive anywhere…Joel Robuchon. Boasting Branches in Tokyo, Paris, London, Las Vegas and Hong Kong Robuchon’s culinary arm stretches far and wide and, in the case of the Four Seasons New York, it seems here to stay. The interior is scintillating; glass showcases along the bar feature perfect red, yellow and green peppers, while vases filled with limes and other greenery lend flair to the blond wood room, trimmed with the trademark black and red. 30 table seats add a twist to this outpost of Robuchon’s L’Atelier brand, but the 20-seat bar, an intimate, U-shaped outcropping from an immaculate kitchen, is still the most coveted space where culinary works of art are prepared before your very eyes. One particular dish perfectly captures the essence of restaurant from a true culinary superstar. “Le Burger” is actually two little sliders of foie gras, equally juicy beef patties and a tiny heap of caramelized peppers piled inside brioche buns. They are meticulously constructed, yet there’s a winking flippancy in their presentation and a stroke of comfort in their flavour. Signatures like, lollipop-like frogs’ legs and plump langoustine, wrapped in a crunchy wonton are all here too amidst a chameleonic schmorgasboard of a menu.
