One of the few restaurants in italy to have a much lauded after Michelin Star Il Convivio is one of the most highly acclaimed restaurants in Rome. Its 16th-century building is a classic setting in pristine white with warm accents of dark wood panelling. The brothers Troiano oversee the menu, turning out inspired cuisine based on the best and freshest ingredients at the local market. Their bill of fare is seasonally adjusted to take advantage of what's good during any month. Starters like caramelized tuna fish with chestnut honey, ginger, green pepper, rosemary, and green apple purée help set the tone for a menu rich in fruits of the sea. Other tantalizing menu items include tagliatelle with a white pork ragout, wild asparagus, and ginger; or stuffed sole with Roman-style artichokes, Sevruga caviar, shallots, clams, and cream.
