Chef Hiroyuki Hiramatsu and most of his staff may be of Japanese decent, but make no mistake they do ‘French’ unabashedly better than most Parisians! the monochromatic dining room seats just 40 lucky guests who enjoy the Michelin starred delights of Japan’s finest French export! The menu changes at the drop of a hat, but constantly heralds the finest seasonal ingredients artfully prepared. Noteworthy dishes in season may include deliberately undercooked crayfish served with a mousseline of mushrooms and a watercress-and-truffle salad, another example involves strips of pink-cooked pigeon with foie gras, served on a double-decker platter with hot broth poured over the upper plate to cook julienned vegetables and the foie gras. There’sa salon where smokers can run in for a quick toke and/or a pre- or postdinner drink (the dining room is nonsmoking); and polite staff wearing gray-and-white uniforms provide the final touch of Parisian class.
