Under the dramatic wings of the Sydney opera house sits chef Guillaume Brahimi’s homage to Modern Parisian Cuisine. Having trained under illuminaries such as Joel Robuchon in the French capital Guillaume arrived in Sydney with a pedigree destined to set Sydney’s dining circuit allight. This establishment, his third since moving down under, is a gastronomic piece de resistance winning countless awards and accolades since its inception, including three Chef Hats in the Sydney Morning Herald Good Food Guide 2006 (the Australian answer to the Michelin star). Inside, the warmly lit, wood based decor exudes sophistication, a thoroughly cosmopolitan setting for group dining or special occasion. The restaurant is open both pre and post theatre, offering light tapas bites or a full length degustation menu featuring such repasts as the signature basil-infused tuna, a marvel of balance and texture with its mustard seed and soy vinaigrette percetly accentuating the soft flakes of fish. Wine is of a similarly high order with an extensive range of over 350 Australian and international bottles to choose from. It may have a view that encapsulates the whole of downtown Sydney, but there’s no mistaking that the big news here is unquestionably what’s inside rather than out.
