Under Dr Ron Georgiou’s keen eye the restaurant has a 10,000 bottle strong inventory that makes the cellars of France look meager in comparison. Mangan’s menu is a thing of beauty. Seasonal ingredients are prepared using the classic techniques hehas mastered during tenures at the 3 starred Waterside Inn with Alain Roux and in France’s heartland itself to fashion a gastronomic masterpiece. Seafood lovers are in for a treat with Salmon gravlax, dill creme, fraiche, melba toast especially memorable. Likewise vegetarians are guaranteed to enjoy a Cannelloni of silverbeet and pumpkin, celeriac puree, beurre noisette and sage. A quaint location for an intimate evening or family affair Glass at the Hilton is a refined and dignified affair and, when positioned next to the other would be brasseries in Sydney, its’ true class shines through.
