Dietmar Sawyeres’ Forty One, located atop landmark Chifley Tower, has long been recognised as Sydney's most revered fine dining experience. Now into it’s twelfth year guests old and new continue to return for a very intimate yet relaxed fine dining experience, complimented by the breathtaking panorama of Sydney’s harbour and skyline. Guests enter through a tranquil oriental garden, designed by Japanese Landscape guru Ken Lamb. The restaurant decor is plush but understated, complemented with photographs by renowned black and white Photographer, Robert Billington. Rare Tasmanian myrtle wood panelling with harbour blue Thai Silk creates a relaxed elegance together with parquetry flooring, brushed stainless steel balustrading reminiscent of a twenties' ocean liner. And the staff are as attentive and professional as if you were aboard the HSS Queen Mary herself. The menus at Forty One Restaurant change fortnightly for both lunch and dinner to reflect produce of the season, however, Sawyere will continue to combine his European identity with influences from Japanese presentation and Asian and Indian flavours. It’s not a completely separate affair on each visit however. Guest’s can be assured that staples such as Sawyere’s omnipresent Crown Roast of Wild Hare, Braised Belgian Endive Creamed Potatoes and Chartreuse Jus are still always available. Wine, under the care of sommelier Stuart Knox and wine consultant Anders Josephson, is stored and displayed in six new French vin caves in the restaurant’s reception lounge, and comprises of any number of varietals that could compliment ones meal adeptly
