Diners are in good company in this spectacular traditional restaurant as there are no fewer than four original Rembrants lining the walls! D’Vijff Vlieghen (five flies) is not so much a restaurant as a Dutch institution with every guide book and tour guide citing it as the premier exponent of Dutch haute cuisine anywhere in the Netherlands. Chef René Cramer is passionate about what he calls "New Dutch" cuisine, which aims to convey the culinary excellence inherent in many traditional Dutch recipes and products, but in an updated, French-influenced form, employing organic ingredients so far as is possible. The menu has a selection of seasonal fish and game often marinated with fresh herbs and served with unusual vegetables like chard, wild spinach, and Brussels sprouts. For most though a photo of the entrance and glance at the menu is as close as they come to sampling the delights it has to offer as reservations are few and far between.
