Each dish is an exquuisite work of art, from suitably rare and tender spring Iamb with delicate, minted vegetables, fondant potato, red pepper and garlic jam to a crowdpleasing barramundi with pancetta, shimeji mushrooms, cauliflower and horseradish puree. A sweet and sour casserole of king prawns, yabbies, squid and mussels is a triumph of minimalism and restraint, flavourful and textured without being overbearing.
