Chic, upscale, and soothing, this bistro has lots of fresh flowers, a turquoise and peach-toned color scheme that you might expect in Florida, and an atmosphere that manages to be both grandly bourgeois and artsy at the same time. It's a suitable venue for either a seduction or a sales pitch, the kind of place meant for celebrations and champagne. Menu items change with the seasons. Food selections on any given night are limited, but you're almost assured that every item is fresh and carefully chosen by the chef. Inventiveness and solid technique go hand in hand here. At our last meal we began with a confit of quails sprinkled with truffle oil, then moved on to a saddle of turbot cooked in a saffron broth and filled with poached baby vegetables. The dish was made celestial with an accompanying champagne mousse. Another member of our party feasted on roasted saddle of rabbit served with plums in a coat of bacon on a beet mousse, and filet of cod with apple and fig and red lentils. Finish with one of the divine desserts -- we love the chestnut mousse with chocolate truffles on rose pear coulis.
